Staffordshire Beef Steaks

Serves 4

4 x 100-175g (4-6oz) Braising steaks
15g (½oz) Plain Flour
25g (1oz) Beef Dripping
1 Onion, peeled and sliced
450ml (¾ pint) Beef Stock
1-2 tbsp Walnut Ketchup
Salt and Black Pepper

Lightly beat the steaks with a meat mallet or use a rolling pin to flatten.
Coat with well seasoned flour.
Heat the dripping in a frying pan, add the onion, fry until golden.
Add the steaks, browning both sides.
Add the stock, cover and simmer for 1-1½ hours or until the steaks are tender.
Stir in the walnut ketchup.
Place on serving dish, covered with the sauce.
Arrange the steaks, overlapping, on a heated serving dish and serve with the pan gravy poured over them, accompanied by creamed potatoes and a green vegetable.
Serve with seasonal green vegetables and potatoes.
