Chick Pea Appetiser

Homus

400g (14oz) Cooked Chick Peas
115ml (4floz) Olive Oil
60ml (2floz) Lemon Juice
1 tbsp Tahini or Sesame Oil
1 Garlic Clove
Salt and Pepper

Crush the Garlic clove.
Lightly mash the chick peas and place in a food processor with the lemon juice and tahini (or sesame oil) and blend.
Slowly add the olive oil in a steady stream, whilst blending.
Add a little water (if needed) to produce a smooth, creamy mixture, season to taste.
Chill for at least 1 hour.
Serve with warm pita bread, crostini, vegetable slices, etc, garnished with olives, lemon slices or fresh herbs.
