Roman Burgers
Isicia Omentata
from Marcus Gavius Apicius. De Re Coquinaria
450g (1lb) Minced Beef
3-4 Slices Bread, soaked in white wine
30ml (2 tbsp) Liquamen (Fish Sauce)
½ tsp Pepper, freshly ground
Pine Nuts, roughly chopped
Green Peppercorns
Dash of Caroenum
Mix minced beef with the soaked bread, liquamen and pepper.
Form into small burgers and stud with pine nuts and peppercorns.
Brush each burger with a little Caroenum.
Grill under a medium heat turning occasionally until cooked.
